I apologize for the lack of postage yesterday but I think I’m just NOW recovering from my jet lag and no longer have the urge to go to bed at 8PM, which is good. Except for tonight. I think I got a total of 4 hours of sleep last night after staying up waaaaay late. I was supposed to go to PT early this morning but, well, that was just not happening. It’s all good. Fun night > PT.
So instead, I spent the day baking and experimenting in the kitchen today. Some of the baking is related to my exciting news, which I will share with you in due time!
But back to yesterday..
Bet you couldn’t guess what I had for breakfast?
Old faithful. Kashi Heart to Heart, 1/2 of a banana, almond milk, and White Chocolate Wonderful.
Lunch was on-the-go as I had to be at work at the time I usually eat lunch. Which makes a smoothie perfect!
This baby contained:
- 1/2 scoop Jay Robb’s vanilla whey protein powder
- 1/3 cup or so of Greek yogurt
- splash of almond milk
- 1/2 of a frozen banana
- strawberries
- crushed ice
And 2 slices of this ham. Yes, ham.
I haven’t eaten ham in YEARS. But i’ve always missed it and ever since the hot dog episode, I’ve been challenging my ED fear foods. And ham is one of them. And you know what? It was GOOD.
I then had this new Clif Bar at work.
It was SO GOOD!!! It’s not like your regular Clif bar, it’s more crumbly and crunchy… but if you see these, give them a try!
I also had a mini Cherry Pie LaraBar at work.
And then I came home to this..
Roses. I got roses
I’ve NEVER gotten roses. No comment on who they were from…
Dinner was leftovers, but they are good leftovers
Lentil Loaf…
A sweet potato with brown sugar and whipped butter..
And leftover green beans.
I then went and hung out with a friend, came home and had a few cookies… and then went out again, thus beginning my super late night. Thank goodness I had overnight oats waiting in the fridge this morning…
I have been craving overnight oats like CRAZY so this bowl was SO GOOD.
I mixed together last night 1/2 cup oats, 1/2 cup yogurt, splash of almond milk, and cinnamon. I then added another splash of almond milk, blueberries, 1/2 of a banana, and almond butter this morning.
Lunch was peaches and strawberries…
And more lentil loaf…
And some fresh tomatoes from work
Look how RED they are!
And then I got to baking! First up, Gracie’s Peanut Butter Oat Bran Muffins.
I followed the recipe exactly, except I halved it. And I used White Chocolate Wonderful peanut butter.
They are SO GOOD!!! Because you KNOW I had to test them…
And then I made Jessica’s Whole Wheat Blueberry Banana Bread Muffins, but with a few alterations because of what I had on on hand.
I subbed the blueberries for mini semi-sweet chocolate chips, the applesauce for Greek yogurt, and halved the recipe.
O.M.G. These are SO GOOD!!! And SO moist!!!! All warm and chocolately and melty and gooey right out of the oven.. I think I died a little bit.
Both muffins definitely passed my test!!
I also had an amazing snack, courtesy of the beautiful Jenny’s blog! A faux frosty!!
My blender died today (after like a month?!) but thank goodness for my handy food processor…
All I can say is PLEASE go try this… NOW!!!! Seriously amazing.
Dinner was a veggie feast!
What’s that? Pasta?
Nope. That would be spaghetti squash with Whole Food’s brand Sun Dried Tomato and Basil sauce. With a sprinkle of sharp raw white cheddar cheese.
This was my first time trying spaghetti squash (thank you my lovely Twitter friends!) and I was VERY impressed! Delicious!
I also had a side of more fresh veggies!
Fresh corn…
And fresh boiled okra. Both grown not 10 minutes from where I live! Yay for local produce!
I also thought I’d share with you some of the loot I packed into my suitcase from Ireland…

Hmm.. it’s hard to describe okra, it has it’s own distinct flavor. But I LOVE it! If you do find it, i’d suggest trying it first by baking it or using it in a soup or something. When you boil it like I do, it kind of ends up slimy… I love it but some people hate it like that. And you’re welcome!

Ack! Girlllll… all of your muffins make me crave some like mad. I haven’t made anything but cookies lately, but I seriously think I need to get back into the muffins. I miss them, and yours had me drooling!
And those roses are absolutely gorgeous! You’re definitely a lucky girl, but so is whichever guy is lucky enough to be close to you.

I found it at Whole Foods! But it wasn’t on the bar aisle, in my store, it’s near the PB where they have boxes of individually wrapped portions of cookies, crackers, etc. It comes in a box with 6 bars. Ahhh it would be SO awesome to meet you!
Jessica has the best recipes! I was eyeing those blueberry muffins too, but I didn’t have any blueberries. Or chocolate chips! I need to restock the pantry asap.
There is nothing like a muffin fresh out of the oven…these look fantastic!

How was the okra? I’ve never tried it, but I’ve always wondered at the taste.
It’s hard to describe… boiling it makes it kind of, well for lack of a better word, slimy.. but I love it. BUT if you’ve never had it, I’d encourage you to bake it. It gets super crispy, it’s so good!
I love coming home from a trip and being able to eat all my favourite meals again! Especially breakfasts.

I just read your first Ireland recap and it already sounds like so much fun!! I had to laugh at the Russian exchange student thing, I sat next to a kid from Spain once on a flight to Pittsburgh and it was a chatty ride.
