As I explained in my previous, very brief, post, my laptop is currently very sick. I took it to a local computer doctor and I’m supposed to hear back on Monday about the fate of my dear, dear laptop. I’m hoping it’s just a simple issue. AND my camera is quite on it’s last leg. It will NOT die on me. I can’t even tell you how long it took me to get the pictures on this computer, a desktop computer from the ancient days. But it will suffice for tonight. Hopefully I will have my laptop back in my hands by the beginning of the week and all will be well in the world of Jessica. The Ireland re-caps will also be put on hold until I get my laptop back as well, I hope you understand. And also, since I don’t have all of your lovely blogs saved on this computer, if I don’t get around to your blog in the near future, it’s not for lack of trying. I love you all still 🙂
In other news, I did have my follow up appointment with my nutritionist yesterday. It went… well, it went. I really love my nutritionist and she has helped me out a LOT. But, I did not love all she had to say yesterday. She gave me this huge packet of information that we briefly went over but I haven’t had time to sit down and read yet. Basically, there’s a lot you can do in your diet to help reverse Osteopenia, which is fantastic news. BUT, it’s going to require a massive overhaul of my eating habits, for the most part. I do eat more vegetables than most people my age (as is normal in this lovely blogging world) but I need to up my game. Big time. I’ll share more on that later though, once I’ve read through the information and had more time to digest it.
I won’t bore you with a detailed description of everything I’ve eaten in the past few days (and I haven’t exactly taken a picture of it all) but I’ll give you a short brief.
I had an AMAZING breakfast back on Wednesday (is it sad that I’m having a VERY hard time remembering what I did that day?
Anyways, this was 2 frozen waffles (flax? whole wheat? something like that)..
I topped them with Barney Butter, heated strawberry jam, yogurt, maple syrup, strawberries, and blueberries.
So delicious!
I looove all the summer berry action!
Part 1 of lunch was this incredible parfait… in a Guinness glass all the way from Ireland!
I layered Greek yogurt, a crumbled peanut butter oat bran muffin, peaches, and blueberries.
Oh wow. Oh wow wow wow. This was amazing!!!
And then, don’t judge me. Promise?
This would be ham spread with laughing cow cheese with a pickle inside.
Don’t knock it ‘til you try it… I’m telling you!
Along with a farm fresh cucumber.
I had a huge batch of veggies for dinner on Thursday.
Kale chips, roasted zucchini, and roasted okra.
Also a salad.
And then I made Andrea’s Vegan Chocolate Cupcakes.
I frosted them with cream cheese icing and a dollop of chocolate ganache. OH my my my… seriously, go make these!
I served these to people and they were AMAZED they were vegan! SO MOIST and fudgy and chocolaty!
On Thursday I had PT and then spent the day at the pool (outside) with a friend. Lunch was this…
That would be a protein shake (1/2 scoop Jay Robb’s vanilla whey and 1 cup almond milk), a ham sandwich, and an apple.
It’s all wrapped up because it’s one I picked up at the airport in NYC last weekend.
I had overnight oats for breakfast on Friday, courtesy of this baby all the way from Ireland. Instant Strawberry oats.
I mixed it with some 2% Greek yogurt and almond milk.
Topped with strawberries, blueberries, and peanut butter.
Holy yum. That is all.
Lunch was ANOTHER ham sandwich on fluffy white mountain bread from Publix.
After denying myself ham for YEARS (which was one thing I actually missed), I think my body is trying to make up for missed time.
I then went out with a friend last night and watched part of the baseball world series (USC vs. Clemson, AKA the BIGGEST college sports rivalry around here). Go USC!
Breakfast this morning was old faithful, Kashi Heart to Heart, 1/2 of a banana, almond milk, and peanut butter.
Justin’s peanut butter, to be exact. Delicious, but I found it kind of hard to stir?
Lunch was a banana and this bar that I found at Earth Fare. (I worked through lunchtime and all afternoon so it had to be a portable and non-messy lunch)
Um, this bar rocked my face off. Like, it’s up there with my favorite Clif bar. Yeah. Freaking good! And kept me full most of the afternoon, until around 4:00. When I hit up the Old Fashioned candy at work.. yeah. Sugar tummy ache then ensued. I went out to eat dinner with a friend, or shall we just call it a gab fest? I had spaghetti with marinara and a bit of a salad. And came home to this baby…
Vegan Carrot Cake from Earth Fare.
AMAZING! Can you see the orange zest in the icing?
So freaking good.
My nutritionist gave me this lecture about how sugar is horrible for you and so I think I was subconsciously rebelling when I picked this up. And the candy I consumed today. And the massive amounts of pretzel M&Ms i’ve eaten in the last couple of days. Oh well. Such is life. I have been taking the new calcium supplements she gave me that are raw and made from actual food and are supposed to be top of the line (but taste like.. well, we won’t go there). So yeah, I’ll go all veggie crazy this week. And enjoy my sugar today 🙂
In other news, guess who is going to the Healthy Living Summit in August?! THIS LADY!!! Heck yeah! Who’s excited?
I love you all! And I hopefully will be back with regularly scheduled blogging soon. Enjoy what’s left of your weekend!
Love,
Jess

ANYWAY, your food looks soo yummy! do you really like J-robs protein? I just tried it and im not sure if im a fan..
Hope your computer is o.k…I hate when things happen to my computer..

everytime i see your food pics (esp. the desserts) i feel like you need to slap a warning sign on.. i just swallowed a bunch of saliva/drool which sounds really gross but i cant help it! its the damn close ups of the deliciousness that gets me everytime 😉
oh up your game with ur diet? do u mean in terms of protein.. and types of protein? … i’ll just have to wait and hear what the package is all about. ❤
xoxo
theprocessofhealing said:
No, actually she told me that too much protein could be really bad for my osteopenia. She says that I need more veggies and alkaline foods.. I’ll explain that in a later post. But basically, if you have osteopenia, you’re supposed to be eating alkaline foods versus acidic foods.. it’s super complicated.

I would love to see what dietary changes you’re going to make, as I have osteopenia too (spinal) and would be so intrigued to see how I can help to alleviate it if possible.
I have to say though, are you sure this nutritionist is worth seeing? I would question her attitude, as there is no evidence to suggest that sugar is detrimental to bone density or indeed to overall health provided it’s consumed in moderation and you’re not diabetic. I can’t believe she started lecturing you about how sugar is ‘horrible’ for you ~ doesn’t she realise you’ve suffered from an eating disorder? That kind of talk isn’t constructive for anyone and personally I’d be skeptical of what she says because she sounds somewhat extreme. Nutritionists aren’t Gods ~ they don’t always get it right and I’ve seen some terrible ones in my time. Quite honestly, I think a lot of people in the food blog world know more than these nutritionists anyway. I think you should have your (carrot) cake and eat it. Enjoy a few treats, and don’t let her guilt you out about it!
I hope you have a fantastic time at the HLS ~ you’re one lucky lady 😀

I agree girl, and I’ll definitely be posting more on it in the future.

Hi Jess,
I have to agree with Jessica above and say don’t be too hard on yourself with the sugar thing, I think you have the moderation thing down, at least from the pictures on your blog, and that is so important. I’m sure your eating has improved SO much from your days battling your eating disorder more and you are doing great. 🙂 I admire your fight very much.
Glad you are back! Love your blog.

Thank you so much girl! I can’t tell you how much that means to me!

I definitely would have rebelled against the nutritionist too! I love my sugar. Everything in moderation : )

AHHHHH I AM SO FREAKING EXCITED YOU’RE GOING TO THE HLS!!!! AHHHH!!! YAY!!!! If you need a roomie let me know ASAP, I’m still looking for one!! This totally made my morning!!!
Yes, sugar is the devil, but it’s important not to let your physical health get in the way of your mental health. If a slice of carrot cake is going to help you have fewer disordered thoughts about food, and make you happy, then go for it. We all know you’re not eating it three times a day!!
Ahhh yay HLS! Can’t wait to meet you!!

Your going to the Summit??! Wow. Not really sure what that is LOL – but do you get an invite or is open sort of thing??
LOVE your pictures. If there’s ever a contest/reward, I am SO nominating you.
And OMG that cake…I ate 4x that slice you had yesterday…and yeah sugar overload is right…I’ve been eating licorice and chocolate and sweets every single night…I know I need to just stop and I feel awful for it…such is life is right.

All of your food looks delicious! Especially the carrot cake!
Honestly, I was very surprised that your nutritionist would lecture you about sugar. Doesn’t she know about your eating disorder? I’ve so many nutritionists for my eating disorder (probably about five or six), and not one of them has ever told me to avoid sugar. Eating well and healthfully is about practicing moderation, and sugar is fine as long as you’re not replacing other important nutrients with it. It’s okay to treat yourself. In recovery, you’re not supposed to avoid foods – you’re supposed to learn how to allow yourself different foods.
I hope it doesn’t sound like I’m bashing your nutritionist, but I was just very surprised that she would tell you to avoid sugar. I think that some nutritionists have a hard time understanding fully the impacts of an eating disorder and how to treat patients who are in recovery.
Chelsea @ One Healthy Munchkin said:
That’s really good news that there are things you can do to help reverse osteopenia! I’m interested to hear your nutritionist’s suggestions! I wouldn’t worry too much about the sugar thing though. I think she went a little overboard with her warnings against sugar. Everything is fine in moderation! Besides, what sane person could resist that carrot cake? It looks amazing! So do the rest of your eats!
That’s so exciting you’re going to HLS! You’re going to have a blast! 😀

My comp is sick too. I think it actually passed away. I’m currently using my sister’s Mac. I know how it feels though- feels nekkkked without it!
I don’t think you should feel *too* bad about what your nutritionist said. The good news = you CAN do something to help reverse osteopenia. The bad news would have been if she said there’s nothing you can do!
Have a great Sunday chica. LOVE YOU! XOXOX

Yaaaaaaaaaaay for the HLS! I am now (if it’s even possible) doubly excited.
Your eats look fantastic, as always.
I’m sorry that you had a bit of a rough stint with your nutritionist but I’m really pleased that she said there was something you could do. Your process of healing is a process indeed, but I’m so proud of the way you’re powering through ❤
Do NOT ditch sugar! Honestly, it's not evil. How could something as mouth-wateringly delicious as that picture be avoided? You're on a great healthy track. If you're eating too much sugar, I'm in big trouble – and so is the rest of the world, pretty much.
Stay sweet 😉
Love you!!

Girlie, how did you know I was in the mood for making chocolate muffins! You just saved me the effort of having to go out and find a good recipe to try 🙂 Will be making these as soon as the weather cools down a bit. Hot sun + hot oven don’t make a good pairing these days.
That’s so exciting that you’re going to HLS, though! I really wish I could go and meet some of the amazing bloggers out there, but I won’t be able to sadly 😦 I’ll just have to live vicariously through everyone else 🙂
And I really wish that people would stop harping on the whole “sugar is the devil” thing… It may not be the best, but it’s not going to kill us… and a delicious piece of carrot cake probably does more good for our mental health than the sugar does bad for our physical health. Enjoy it, girl!

Don’t get me started. Carrot cake is my absolute favorite. You inspired me to get a hunk for myself in the (very) near future. LOVE YOU!
