Annnd she has returned! It’s been a crazy CRAZY busy week, full of ups and downs. Still loving work but I’ve had my fair share of, shall I say, “difficult” customers by this point. But such is life! One of the best things that has come out of this job is meeting new people and making new friends, something I really needed in my life. A fresh new start. And I plan to make the most of it!

A delicious Macintosh apple.. love my honey crisp but these babies are soo good this time of year!
A delicious sandwich with turkey, turkey bacon, and cheddar cheese… ok, who I am kidding? It was Velveeta. And it was to die.
All melty and gooey…
I had a double that day (meaning I worked both lunch and dinner) and on my break, I had this meal. My tummy was feeling a bit off so I was going for something that would be easy on it.
2 scrambled eggs
And a slice of buttered sourdough bread
A bite of pumpkin chocolate chip blondie for dessert..

What is that? Something besides cereal for breakfast?
2 Van’s Whole Wheat Belgian waffles..
With peanut butter, pumpkin butter, and raspberries.
A salad bar creation from Jason’s Deli!
SO GOOD! It had lettuce, tomatoes, cucumbers, carrots, cheddar, bacon bits, croutons, 1 boiled egg, bites of a pasta salad, a bean salad, a corn muffin, all with ranch dressing..
It wasn’t that great. Obviously 😉
With one of their gingerbread mini muffins for dessert.
And this energy drink I found at Target that I had before work. So not good for you, with all those chemicals, but sometimes you gotta do what you gotta do folks..
I invested in some frozen meals for late night dinners after work, and I was really excited to try this one!
While I loved the plantain part of this dish, the rest was just kinda meh.
Light vanilla ice cream with chocolate syrup for some dessert action.
Thursday
And the cereal is back.. I just couldn’t stray for too too long..
Who says you can’t have pancakes for lunch?
Whole wheat pancake/waffle mix mixed with pumpkin, vanilla, pumpkin pie spice, egg whites, and water.
Topped with PB & Co.’s The Bees Knees and pumpkin butter.
I don’t know why but these were SO FLUFFY!!!

Cereal yet again..
And a frozen thin mint girl scout cookie… oh yes, I STILL have some in the freezer. These things are AMAZING right out of the freezer, FYI.
Roasted kobocha..
With maple syrup, salt, cinnamon, and a bit of butter.
And tofu cooked until CRISPY seasoned with teriyaki, soy, and maple syrup.
I had this when I got home from work last night and oh boy..
Forreal, it was AMAZING. Incredibly cheesey and yummy and just so good!
Amy’s products have yet to fail me..
With some gelato for dessert!
Wooo that was a long one!!! Thanks for hanging in there, hopefully I’ll be able to find time to blog more frequently so the posts won’t be QUITE as massive.
In other news, I have a request.. I am DYING to try Trader Joe’s Peanut flour but there is not a TJ’s within an hour and a half of me (YET), which leads me to my request.. if any one of you incredibly sweet and kind blog readers live near a TJ’s and would be kind enough to send me some of this coveted flour, I’ll send you a package in return!
