Almost Friday… almost. Just one more day 😀

I loved reading all of the responses about if your family/friends read or even know about your blog. I agree with some of the comments in that my life and family/friends and my blog are two very separate things. Maybe one day I will tell them about it but for now, I like to keep it my little secret. It is almost like a diary. If I knew that certain people were reading, I almost think that I would probably be guarded in what I said. And I really don’t want that. My parents do know about my blog but they don’t completely “get” it. But that’s ok. They know that I enjoy it and so they support me.

I’m trying to think of something interesting, exciting, or clever to report but honestly… today was not very eventful. But sometimes that’s a good thing 🙂 How was your day?

I first wanted to mention the protein cake that I had last night. I was still slightly hungry and I wanted something chocolately… so I busted out this chocolate protein cake, courtesy of April’s genius mind.

I followed her instructions and mixed

  • 15 +/- grams of chocolate protein powder
  • 1 tbsp. cocoa powder
  • 1/4 tsp baking powder
  • 2 packets stevia
  • 1 tbsp. pumpkin
  • 1 egg white

Microwave for 1 minute and top with Cacao Euphoria and you have amazingness. They are super easy to make, low in calories and high in protein and flavor! Honestly, it looks like a chocolate cupcake!!!


Yumm.. it was warm so the Cacao Euphoria got all melty… delicious!!!


Today was full of simple, but delicious, eats. Sometimes simple is good 🙂

Breakfast was oats in overnight form 🙂


This batch included 1/3 cup oats, 1/3 cup water, 1/3 cup milk, chia seeds, 1/2 banana, blueberries, cinnamon, and Naturally Nutty peanut butter.


Heaven in a bowl, my friends.


For lunch I had another amazing sandwich, courtesy the Italian 5 grain. Honestly, the bread SO makes the sandwich. Good crusty FRESH bread makes all the difference in the world. What’s your favorite sandwich?


It had chicken, baby spinach, mustard, tomato, and sharp raw cheddar (adore this stuff!).



And with it I had some broccoli and baby carrots…


dipped in hummus.


And a nectarine.


I may or may not have had a cookie for dessert…


Dinner was simple but good.


I had a turkey burger with ketchup and mustard (I LOVE ketchup… can you tell?!)


with a sweet potato. With some buttah.



And then for dessert, I busted out the blender to try my hand at a milkshake of sorts. I blended:

  • 3/4 cup milk
  • 1/2 banana
  • vanilla protein powder (1/3 of a packet that I have)
  • 1/4 tsp xanthan gum
  • dark chocolate chips
  • ice


Oh so darn good. Honestly, just like a vanilla milkshake with some chocolate chips mixed in. Kinda like melted ice cream. I know it looks like soup but it was super thick and creamy. I eat it in a bowl because it seems to make it  last longer 🙂 Is it sad that I’m in love with my blender? I think not.

Injury Update: My injury has been feeling better consistently day by day lately. I’ve been afraid to say anything for fear of jinxing it. In the past, every time it has started to improve I would exercise and I think put the progress to a halt. This time, I am waiting until I am virtually pain free for a while before I try again. It is SO hard to wait. But I know it will be worth it in the end. And now that I am declaring this publicly, if I exercise too soon… yell at me. Ok? Ok.

I found the following quote and it really struck me. So often we wait for the perfect “time” to do something – everything has to be just right, everything aligned just so. But you know, sometimes that never happens. Sometimes the timing doesn’t seem perfect… but you just have to go for it, regardless. I’m sure you’ve heard the saying “time heals all wounds.” Do you think that’s true? I’m not so sure. I think that there are some things even time cannot fix.
