Almost Friday… almost. Just one more day 😀
I loved reading all of the responses about if your family/friends read or even know about your blog. I agree with some of the comments in that my life and family/friends and my blog are two very separate things. Maybe one day I will tell them about it but for now, I like to keep it my little secret. It is almost like a diary. If I knew that certain people were reading, I almost think that I would probably be guarded in what I said. And I really don’t want that. My parents do know about my blog but they don’t completely “get” it. But that’s ok. They know that I enjoy it and so they support me.
I’m trying to think of something interesting, exciting, or clever to report but honestly… today was not very eventful. But sometimes that’s a good thing 🙂 How was your day?
I first wanted to mention the protein cake that I had last night. I was still slightly hungry and I wanted something chocolately… so I busted out this chocolate protein cake, courtesy of April’s genius mind.
I followed her instructions and mixed
- 15 +/- grams of chocolate protein powder
- 1 tbsp. cocoa powder
- 1/4 tsp baking powder
- 2 packets stevia
- 1 tbsp. pumpkin
- 1 egg white
Microwave for 1 minute and top with Cacao Euphoria and you have amazingness. They are super easy to make, low in calories and high in protein and flavor! Honestly, it looks like a chocolate cupcake!!!
Yumm.. it was warm so the Cacao Euphoria got all melty… delicious!!!
Today was full of simple, but delicious, eats. Sometimes simple is good 🙂
Breakfast was oats in overnight form 🙂
This batch included 1/3 cup oats, 1/3 cup water, 1/3 cup milk, chia seeds, 1/2 banana, blueberries, cinnamon, and Naturally Nutty peanut butter.
Heaven in a bowl, my friends.
For lunch I had another amazing sandwich, courtesy the Italian 5 grain. Honestly, the bread SO makes the sandwich. Good crusty FRESH bread makes all the difference in the world. What’s your favorite sandwich?
It had chicken, baby spinach, mustard, tomato, and sharp raw cheddar (adore this stuff!).
Yum.
And with it I had some broccoli and baby carrots…
dipped in hummus.
And a nectarine.
I may or may not have had a cookie for dessert…
Dinner was simple but good.
I had a turkey burger with ketchup and mustard (I LOVE ketchup… can you tell?!)
with a sweet potato. With some buttah.
And then for dessert, I busted out the blender to try my hand at a milkshake of sorts. I blended:
- 3/4 cup milk
- 1/2 banana
- vanilla protein powder (1/3 of a packet that I have)
- 1/4 tsp xanthan gum
- dark chocolate chips
- ice
Oh so darn good. Honestly, just like a vanilla milkshake with some chocolate chips mixed in. Kinda like melted ice cream. I know it looks like soup but it was super thick and creamy. I eat it in a bowl because it seems to make it last longer 🙂 Is it sad that I’m in love with my blender? I think not.
Injury Update: My injury has been feeling better consistently day by day lately. I’ve been afraid to say anything for fear of jinxing it. In the past, every time it has started to improve I would exercise and I think put the progress to a halt. This time, I am waiting until I am virtually pain free for a while before I try again. It is SO hard to wait. But I know it will be worth it in the end. And now that I am declaring this publicly, if I exercise too soon… yell at me. Ok? Ok.
I am thankful today for…
- The progress of my healing
- The bloggie – I can’t believe how many new friends I have made through it! You guys are so special to me!
- My kids at work.

I found the following quote and it really struck me. So often we wait for the perfect “time” to do something – everything has to be just right, everything aligned just so. But you know, sometimes that never happens. Sometimes the timing doesn’t seem perfect… but you just have to go for it, regardless. If you wait for perfection, you will, quite possibly, be waiting forever. And sometimes I wonder about the timing of things in life. So often things happen and I think “why did that have to happen then? why did that person come into my life at this specific time?” Time can change everything. The timing of things is not always easy to understand but I truly believe that there is a reason for everything.
"Don’t wait. The time will never be just right." – Napoleon Hill
I’m sure you’ve heard the saying “time heals all wounds.” Do you think that’s true? I’m not so sure. I think that there are some things even time cannot fix.
What do you think? Do you believe everything happens for a reason?

that’s a great quote! i actually do believe time heals all wounds, but not in the way that people commonly refer to. i think some things are not reparable just by time, like relationships that were damaged by hurtful acts, it takes both people to work on fixing the relationship AND time. but when it comes to the ups and downs of life, even when you are feeling really shitty, it’s true that it will pass, and therefore time heals all wounds! i really want to buy protein powder just for the sake of making those protein cakes. what kind do you use?

That’s very true. Kinda like the saying “the best is yet to come.” Gives you hope through the harder times!
As for the protein powder, I’ve been wanting some myself but I don’t have much experience with it so I got several small packets of different kinds from Whole Foods. The kind that I used for the protein cakes was Jay Robb’s Whey Protein – Chocolate. I also used the same kind, but vanilla, for the smoothie. Very good… absolutely no chalky weird taste.

Love that quote! It’s so true. I was always wait for ‘perfect timing’ to do things but I’ve learned to live in the moment and take chances! Thanks : )
And I do believe everything happens for a reason

I LOVE ketchup – I smother food in it so that you can’t even see the food…oops. Love sandwiches – they vary day by day – that bread you have looks really good by the way 🙂

MMmm…I LOVE ketchup too 🙂 Definitely one of my favorite condiments. I’m so glad to hear that your injury is feeling better– definitely a good idea to wait until you are absolutely pain-free before exercising again!

Chocolate euphoria has been making my mouth water every time I see it on the blogosphere. I need to jump on the bandwagon!
That’s such a great quote. It’s so true, timing can NEVER be perfect. There will always be an excuse not to do something, but if you want it, you have to let go of timing and just go for it. I think time does a good job of healing most wounds, but they still leave scars. You can stop hurting from something, but that doesn’t mean the reminder of pain isn’t still there.
Happy Friday and have a great weekend love!

You should try it, it’s so easy to make!
Have a great Friday and weekend yourself!

Oh, so much to say about this post. First, the food. Amazing chocolate protein cake! Looove ketchup and sweet potatoes with butter! You’re photos are so bright and beautiful!
I do believe that time heals all wounds. I only think that because at the time of a devastating occurrence you think you’ll never recover or ever feel right again. But slowly, you move forward and gain strength and perspective.
I don’t know if I believe everything happens for a reason. I think we are just able to rationalize and find strength/wisdom in most things.
Good questions!
Have a great Friday!

Oh gosh, that protein cake looks so good smothered in choco. I think that would satisfy a chocolate craving 🙂 I’m glad your injury is feeling better. You’re right – waiting is better if you can stand it! And yes, I think you do like ketchup 😛

Hey chicky,
That protein cake looks to die for! I’m def gonna try it out this weekend 🙂
I really like your quote. But I think as far as injuries go waiting is better. From experience, I always tried to exercise earlier than I should have. That only put me back further. My worst injury (I partially tore my sartorious muscle in the Boston Marathon) required 6 months of recovery. I was so antsy around months 5-6 that I tried to run and further hurt my leg making the recovery about 8 months.
Needless to say, you are doing fantastic 🙂 Keep your head up and you’ll be back exercising before you know it!
Have a great weekend!!
xx

I am so glad you injury is doing better. I get you on the jinxing it thing! Anytime I actually say my knee is recovering I find it starts hurting again.
I think time makes things better but I don’t know about it healing. There are certain things you can’t ever forget, no matter how hard you try!

Yay I’m so glad you liked the cake! But I’m even more glad that your injury is better!!

Sometimes I get bitter and think the phrase “everything happens for a reason” is cliche and a cop-out of sorts. But when it comes down to it…*it’s the truth.* I wouldn’t necessarily say I’m a believer in FATE, but as someone who has faith in God I do believe in *predestination.* That’s not to say that we don’t have any control of our lives, but I believe that there are sources outside of us that we cannot control. Does that make sense? Or am I getting to “deep?” haha
theprocessofhealing said:
I think that makes perfect sense, and I agree.

I believe things happen because we make them happen. I guess that’s “a reason.”
I want your nectarine. It’s like I forget they exist until I see someone eating them.

Your day of simple eats looks simply delicious! Sweet potato with a veggie burger and ketchup is one of my favorite kind of dinners 🙂
I do believe that everything happens for a reason… life is constantly teaching us things and we”ll continue to “live the lesson” until we learn what it is we’re supposed to learn and move on. Even bad experiences and suffering serve some ultimate purpose and make us grow, sometimes it just takes time for us to understand that.

Yum to that protein cake!! I think my favorite sandwich is oil packed tuna, black olive tapenade and marinated artichoke hearts (so good!). Although since I’m going vegetarian for lent I don’t see that in my near future 😦 I may have to use my sunday cheat day…
I believe everything happens for a reason as well. It sometimes takes a long time (read years) to understand where the good can come from, but even in the most horrible pain comes a learning experience. I had a bad knee injury after my first marathon last year and it’s been a slow recovery, but in my recovery I was forced to look at all available sources of healing and came upon some really interesting readings about the mind-body connection that has influenced my views on my thoughts, body and even the food that I eat.
