As I explained in my previous, very brief, post, my laptop is currently very sick. I took it to a local computer doctor and I’m supposed to hear back on Monday about the fate of my dear, dear laptop. I’m hoping it’s just a simple issue. AND my camera is quite on it’s last leg. It will NOT die on me. I can’t even tell you how long it took me to get the pictures on this computer, a desktop computer from the ancient days. But it will suffice for tonight. Hopefully I will have my laptop back in my hands by the beginning of the week and all will be well in the world of Jessica. The Ireland re-caps will also be put on hold until I get my laptop back as well, I hope you understand. And also, since I don’t have all of your lovely blogs saved on this computer, if I don’t get around to your blog in the near future, it’s not for lack of trying. I love you all still 🙂

In other news, I did have my follow up appointment with my nutritionist yesterday. It went… well, it went. I really love my nutritionist and she has helped me out a LOT. But, I did not love all she had to say yesterday. She gave me this huge packet of information that we briefly went over but I haven’t had time to sit down and read yet. Basically, there’s a lot you can do in your diet to help reverse Osteopenia, which is fantastic news. BUT, it’s going to require a massive overhaul of my eating habits, for the most part. I do eat more vegetables than most people my age (as is normal in this lovely blogging world) but I need to up my game. Big time. I’ll share more on that later though, once I’ve read through the information and had more time to digest it.

I won’t bore you with a detailed description of everything I’ve eaten in the past few days (and I haven’t exactly taken a picture of it all) but I’ll give you a short brief.


I had an AMAZING breakfast back on Wednesday (is it sad that I’m having a VERY hard time remembering what I did that day?


Anyways, this was 2 frozen waffles (flax? whole wheat? something like that)..


I topped them with Barney Butter, heated strawberry jam, yogurt, maple syrup, strawberries, and blueberries.


So delicious!


I looove all the summer berry action!

Part 1 of lunch was this incredible parfait… in a Guinness glass all the way from Ireland!


I layered Greek yogurt, a crumbled peanut butter oat bran muffin, peaches, and blueberries.


Oh wow. Oh wow wow wow. This was amazing!!!


And then, don’t judge me. Promise?


This would be ham spread with laughing cow cheese with a pickle inside.


Don’t knock it ‘til you try it… I’m telling you!


Along with a farm fresh cucumber.

I had a huge batch of veggies for dinner on Thursday.


Kale chips, roasted zucchini, and roasted okra.


Also a salad.

And then I made Andrea’s Vegan Chocolate Cupcakes.


I frosted them with cream cheese icing and a dollop of chocolate ganache. OH my my my… seriously, go make these!


I served these to people and they were AMAZED they were vegan! SO MOIST and fudgy and chocolaty!


On Thursday I had PT and then spent the day at the pool (outside) with a friend. Lunch was this…


That would be a protein shake (1/2 scoop Jay Robb’s vanilla whey and 1 cup almond milk), a ham sandwich, and an apple.


It’s all wrapped up because it’s one I picked up at the airport in NYC last weekend.


I had overnight oats for breakfast on Friday, courtesy of this baby all the way from Ireland. Instant Strawberry oats.


I mixed it with some 2% Greek yogurt and almond milk.


Topped with strawberries, blueberries, and peanut butter.

Holy yum. That is all.


Lunch was ANOTHER ham sandwich on fluffy white mountain bread from Publix.


After denying myself ham for YEARS (which was one thing I actually missed), I think my body is trying to make up for missed time.


I then went out with a friend last night and watched part of the baseball world series (USC vs. Clemson, AKA the BIGGEST college sports rivalry around here). Go USC!

Breakfast this morning was old faithful, Kashi Heart to Heart, 1/2 of a banana, almond milk, and peanut butter.


Justin’s peanut butter, to be exact. Delicious, but I found it kind of hard to stir?


Lunch was a banana and this bar that I found at Earth Fare. (I worked through lunchtime and all afternoon so it had to be a portable and non-messy lunch)


Um, this bar rocked my face off. Like, it’s up there with my favorite Clif bar. Yeah. Freaking good! And kept me full most of the afternoon, until around 4:00. When I hit up the Old Fashioned candy at work.. yeah. Sugar tummy ache then ensued. I went out to eat dinner with a friend, or shall we just call it a gab fest? I had spaghetti with marinara and a bit of a salad. And came home to this baby…

So freaking good.

My nutritionist gave me this lecture about how sugar is horrible for you and so I think I was subconsciously rebelling when I picked this up. And the candy I consumed today. And the massive amounts of pretzel M&Ms i’ve eaten in the last couple of days. Oh well. Such is life. I have been taking the new calcium supplements she gave me that are raw and made from actual food and are supposed to be top of the line (but taste like.. well, we won’t go there). So yeah, I’ll go all veggie crazy this week. And enjoy my sugar today 🙂

In other news, guess who is going to the Healthy Living Summit in August?! THIS LADY!!! Heck yeah! Who’s excited?
