Sometimes…

Sometimes, good old-fashioned oats make the best breakfasts.

March 12 057

Even though sometimes instant oats do the trick, as one may be too lazy to stand over the stove and whip some up from scratch.

March 12 058

Sometimes, a protein filled lunch hits the spot…

March 12 060

(A pack of tuna mixed with a tsp. of mayo)

With a blood orange on the side…

March 12 059

Even though sometimes, your camera eats the picture of the protein packed smoothie (frozen strawberries, 1/2 of a banana, Greek yogurt, a splash of orange juice, Jay Robb’s Vanilla Whey Protein Powder, and non-fat organic milk)

Sometimes dinner needs to be quick and light as it is 11:30 at night before one is able to eat said dinner.

March 12 061

And sometimes the only vegetable one has the entire day is a simple green salad with romaine and tomatoes.

And sometimes one’s camera eats that picture as well.

Chocolate and wine help ease a bad day. Always.

And once again I bring you WIAW!

Breakfast was a find from my Earth Fare run yesterday.. sweet potato pancakes!

March 7 007

With strawberries and 1/2 of a banana (can we all take a minute to appreciate how excited I am about having bananas again?!)

March 7 008

As it was my day off with nothing to do, I kiiiind of slept in until 12:00 soooo my “breakfast” was more like lunch. Lunch ended up being a random assortment of things after my workout…

March 7 010

Orange juice, strawberries, and a toasted whole wheat bagel thin with Smart Balance.

March 7 011

My stomach has been a bit off the past few days and I haven’t been wanting to eat (which is WEIRD for me) so please excuse the bland eats. Following the trend, dinner was a frozen Shrimp Fried Rice meal from TJ’s.

March 7 014

While it was delicious, it was plain enough for the current wants of my body. So delicious in fact, that I forgot to take a picture of the actual cooked meal. Oops…

And for dessert, Edy’s light Thin Mint ice cream.

March 7 015

Um, prettttty much the best thing I’ve eaten all day.

What was the best thing YOU have eaten today?

COMING SOON: details of the apartment search, a fashion post, and a LIFE post!

Things I Love

In an effort to combat a very, very difficult day/week (other than my Winthrop visit, which was AMAZING and I am in LOVE and counting down the minutes until I get to go…), let’s talk about a few things that I LOVE, with a little help from Pinterest..

  • Tattoos… well, the thought of getting another one. I’m sort of in love with these..

  • Anyone who will buy me this..

Kidding! But seriously…

  • My best friend. My sister from another mother. My soul mate in girl form. You get the idea… We share a love of Ryan Gosling, adult beverages, cake, Jenna Marbles, shoes (we actually have shared custody of a few pairs), etc. I could go on and on but you’d probably get bored and a little scared. And if you don’t know who Jenna Marbles is, go look it up on Google. And you’re welcome.

  • Vegan Carrot Cake. From Earth Fare near Winthrop. As in, THE EarthFare that Kath’s Matt worked at. For some reason, that makes it prettttttty cool to me!

Your turn! Tell me something that YOU love, something that can turn your day around when it’s not going the best?

A Few Things

1. I now present to you, the most amazing smoothie EVER.

March 5 001

  • Plain Greek Yogurt
  • Non-Fat Milk
  • A big serving of peanut butter (specifically PB&Co.’s Cinnamon Raisin Peanut butter)
  • 1 frozen banana
  • 1 scoop Jay Robb’s Vanilla Whey Protein powder

It honestly tasted like a peanut butter vanilla milkshake. That you can feel GOOD about. Legit.

(with a side of TJ’s animal crackers)

2. I have recently became in love with Steel Cut Oats. And the best way I’ve found to cook them? The old rice cooker. It’s like a crock pot.. set it and forget it! Well, with a little stirring now and then. So good!!!

photo (9)

And add them to an almost empty peanut butter jar and you have one jar of absolute goodness.

3. I’m out of bananas. Hence this breakfast…

March 5 005

Maybe I have issues but I ALWAYS have a banana with breakfast. ALWAYS. Thus, it did not start my morning off right. AND, maybe it’s in my head but this breakfast did not keep me full quite as long as usual.

March 5 006

I did some grocery shopping tonight and lo and behold, the HORROR, the grocery store was out of bananas. OUT of bananas.

Let’s all take a moment and let that thought sink in.

I know.

4. I’m going to visit Winthrop tomorrow for a little program they call Transfer Tuesday and to check out apartments. I have a feeling I’m not going to want to come back…

Is it August yet?!

A Day in the Life

Some of my favorite posts of other bloggers? A day in the life of said blogger. Why am I interested in the mundane every day goings on of other people? That I’m not sure. Yet here we all are reading blogs, which are basically just that. In any case, while I don’t find my life incredibly interesting, I thought I would share with you what a typical day looks like for me.

March 1, 2012

10:30 AM – Wake up. Don’t judge… To say I’m not a morning person anymore is an understatement. However, part of the reason for that is because I go to bed late at night due to my job. In any case, I wake up and immediately go for the coffee and breakfast. And until I do, don’t talk to me. Just sayin.

Today I had Kashi blueberry waffles topped with Earth Balance and light syrup with 1/2 of a banana

March 2 001

March 2 003

And, most importantly, energy in a cup.

March 2 005

I’m also not even afraid to say that flavored coffee creamers are one of my indulgences. Yes, I’m quite aware they are full of scary chemicals. Are they delicious? You bet!

After breakfast I’ll usually read some blogs, catch up on necessary computer things, etc.

12 –12:30 PM or so – I head to the gym or workout at home. Yesterday I did 15 minutes on the bike, 20 minutes incline walking (which I am in love with lately), a short leg workout, and then abs/stretching. I usually will spend an hour or so at the gym – it’s my ME time.

2 – 3:30 – I return home from the gym and have some post gym refreshment, lately in the form of a glass of orange juice. I’ve been drinking some sort of juice daily for the past month or so and I can definitely feel the difference. While I don’t like to get my calories from liquids, Vitamin filled natural juices are perfect.

3:30 – I head to work and have lunch/heavy snack on the way to work. Again, don’t judge… I’m aware that driving while eating is probably not the safest thing to do. Do as I say, not as I do 🙂

A smoothie made with frozen peaches, 1/2 of a frozen banana, Greek yogurt, non-fat milk, 1/4 cup raw oats, and 1/2 scoop Jay Robb’s Vanilla Whey Protein Powder. And yes, it did taste like a peach milkshake. YUM!

Baby carrots..

Dipped in raw maple almond butter. <-AKA, crack.

photo 2 (1)

(Don’t worry, all pictures were safely taken before the car was in motion)

4 – 10:30/11:00 – Work. Enough said.

11:00 – 11:30 – I finally return home from work and have some sort of dinner. This specific day I had…

Collard greens, green beans, mashed potatoes, and dressing, Thanksgiving style.

March 2 007

A little fun starchy foods and a little green 🙂

March 2 008

Annd a beer. It was just necessary after last night. Enough said.

March 2 010

11:30 – 1 AM – Relax. Even though I work late, I am NOT one of those people who can come straight home and go to bed. I have to relax and unwind after work and then I’ll usually head to bed around 1 AM or so.

All in all, I do not lead a very exciting life. Buuut, it’s not so bad 🙂

What does a typical day look like for you?

A New Start

I’m baaaaack!!! And for GOOD good this time! I debated starting a new blog as I’m not quite proud of what the old blog has produced over the last year… but, I didn’t want to lose the.. well, history, of the blog. And hey, everyone goes through that middle “awkward” stage, right? Here’s to a new start! I’m not committing myself to blogging twice a day or three times a day or every day.. no commitments. But I DO miss blogging, a LOT, and it’s something I want to be part of my life.. therefore, I’m bringing it back. Over the next few days (and honestly, weeks most likely), I shall be updating links and information, updating the looking, and bringing you guys up to date with the goings on in my life. While the blog IS mostly food related, there will definitely be life posts, fashion posts, random posts, etc.

Since last we talked, things have changed quite drastically in my life. And one of the biggest things? That I’m SUPER pumped about? That is life-changing?! Little old me was accepted to Winthrop University (where our blog land’s beloved KERF attended) where I will pursue (FINALLY) my love of nutrition and health! And you guys get to come along for the ride! I plan on chronicling my new life in the Charlotte, NC area, as well as what I learn in the Nutrition program at Winthrop. While I won’t be moving or starting school until August, I am PUMPED!

There will definitely be more information to come but as not to overwhelm you with a wordy post, I’ll leave you with some delicious meals I’ve enjoyed over the past few days or so.

Overnight OIAJ in the best, aka Barney Butter

Feb 29 019

Feb 29 021

Cake batter pancakes.. you really can’t go wrong with anything that tastes like cake batter!

Feb 29 024

Panda Puffs are always in my life.
Always.

Feb 29 028

Protein smoothies have made a serious comeback. This one had frozen strawberries and bananas, greek yogurt, Jay Robb’s vanilla protein powder, and milk.

Feb 29 034

And salmon has been quite prevalent…. this one was glazed with a teriyaki type glaze, served over rice, with roasted okra on the side.

Feb 29 035

Maple glazed salmon over cous cous with broccolini.

Feb 29 049

Annnd oats have made a comeback. Specifically, rice cooker oats.

Feb 29 063

I combined oats, water, and chia seeds overnight and then mixed in a little extra water, cinnamon, chopped apples, and a pinch of salt in my rice cooker this morning. I then topped them with Barney Butter..

Feb 29 064

The little browned bits that got a bit toasty on the bottom of the rice cooker? My favorite part. 🙂
