This is going to be a quick post as I’m about to go out and celebrate my birthday a little early with my bestie 🙂 As Katie has said, we’re only young ONCE… why not live it up?!
This was pasta topped with a Quorn Chik’n patty, tomato sauce, and parmesan cheese
Tasted JUST like chicken parmesan but a LOT healthier!
And I treated myself to an Easter Little Debbie Cake 🙂
A bowl of oats that I had at some point. I honestly don’t remember what’s in the base but it’s topped with Barney Butter and Peanut Butter Cream Cheese! Does it get any better?!

Yet another bowl of oats.
This time topped with banana, Barney Butter, and Blue Diamond Honey Almond Butter.
Annd peanut butter protein pancakes.
I honestly don’t remember who’s recipe I followed but I sort of screwed them up royally. They look amazing right?! (My boyfriend even said “What is THAT? That looks amazing!! as I was typing this post..)
I added peanut flour to a recipe for whole wheat pancakes (I know I also used whole wheat pastry flour) and honestly they WOULD have been amazing, sans the peanut flour.
Maybe I’m a traitor to the blog world but I just do NOT like peanut flour. I WANT to like it buuuut… it’s just not there.
Another bowl of oats topped with banana, Barney Butter, and Udi’s Gluten Free Granola (which is pretty much GONE… it’s addictive).
SO good! I just loved the crunch the granola added to the otherwise mushy bowl.
The best breakfast I’ve had all week… Kath’s Doughy Overnight Oat Smoothie.
I mixed oats, yogurt, almond milk, cinnamon, vanilla, and chia seeds the night before. In the morning, I blended it all up with a little more milk and topped it with Barney Butter and granola.
Holy cow… I’m thinking this is going to be a regular summer meal 🙂
And a SIAB FAIL. I blended raw oats, cocoa powder, yogurt, ice, and milk. Oh, and xantham gum.
Topped with Barney Butter and peanut butter cream cheese.
It tasted OK but it was WAY too runny..
And finally, something that never fails me..
Cereal, almond milk, and banana 🙂
And now I have a task for you. Grab some friends, get beautified, and go out and have a FUN weekend!!

alright boo, here’s the deal — peanut flour can be funky as a replacement for flour BUT it’s a rock star in this recipe http://www.healthyfoodforliving.com/?p=19211 and I love it in “paste” form (mixed with maple syrup or sweetener of choice + almond milk to think)
