So I know I’m a bit late in the game but someone please tell me how is it already December?! This year has FLOWN by. It seems like just yesterday I started this blog and here it is almost a year later. I thought last year was crazy but this year has without a doubt been the most life changing year of my life. So much has happened this year, including my stress fracture, the entire reason for this blog (and there’s an update coming soon about my fracture). In any case, I’m happy December is here because it is by far my favorite month… I love EVERYTHING about the Christmas season. I just hope it doesn’t go by too fast! I’m also going to join the rest of the blog world and list some mini-goals for myself for December…
Make more time to exercise
As busy as I am with work, exercise has taken a back burner. I know I don’t necessarily HAVE to have cardio from a calorie view-point, as many calories as I burn working, BUT from a health standpoint, I feel like I’m losing all of the cardio endurance that I worked so hard to gain. So I would like to bring a little more cardio back in my life, as well as strength training and regaining the muscle I loss. This also goes along with working to overcome my stress fracture.
Clean up the blog
I haven’t updated any pages, or my blog roll, or my layout, in FOREVER. It’s in need. And now that I’m done with school until Jan, hopefully I can find time to do so.
Figure out what I’m going to do once I graduate in May
I will be graduating in May with an Associate’s in Arts. I planned to then go to culinary school but now I’m debating going for my RD license, which would be a lot harder, school wise, and possibly take longer. Decisions, decisions…
TAKE MY VITAMINS
I’m supposed to take daily vitamins to strengthen my bones, which will help to heal my stress fracture. I’ve been slacking. MAJORLY. It’s so silly because I’ve been dealing with this stress fracture for SO LONG and all I have to do is remember to take some pills three times a day and it would go a long way towards healing…
Eat more veggies
This goes along with the last point as well. As busy as I am, I tend to rely on quick food lately.. pre-packaged or easy to fix. I’m good getting my good carbs, fruit, good fats, and protein but veggies? I’m a slacker. Because I’ll admit it, I’m not a HUGE fan of veggies. And a salad? Only interests me if it’s a GOOD salad. Which I CAN make at home but I’ve been too lazy to buy the ingredients and make it. So I need to get better about that. But this also would help towards healing my stress fracture, fueling my body appropriately.
Family time
I’m always working or spending time with friends or my boy.. I’m hardly at home these days and I’m starting to really miss my family. Especially this time of the year. So I’m going to make an effort to spend more family time… family is the most important thing in my life, so why does it take a backseat to everything and everyone else?
Christmas cookies!
Ok so this isn’t a “goal” persay but I LOVE Christmas cookies and the Christmas cookie season is short.. so I would like to take advantage of it! What is your favorite Christmas cookie? Recipe?

Cherrios! Thanks to Gabriela, I’ve been craving plain Cheerios like MAD. So, I gave in to my craving.
Oh so good, with banana and almond milk.
I’ve also been craving low and slow sweet potatoes and I finally had them for the lunch the other day.
As good as I remember!
Along with yet ANOTHER craving (don’t know what’s with all the cravings..)
Tortilla chips (Food Should Taste Good sweet potato chips) covered in melted cheese. I was craving white queso cheese with tortilla chips but well, gotta work with what you have sometimes.
Breakfast today and yesterday has been TJ’s whole wheat waffles topped with..

And maple syrup.
Chocolate for breakast? Yes please!
And “dinner/lunch” before work last night was OIAJ! And I’m not ashamed to admit that this was probably the highlight of my day. Ok not really but it was up there!
A PB&Co. The Bees Knees jar filled with scottish oats and topped with a microwaved cinnamon apple and TJ’s plain salted peanut butter.
But the secret ingredient? I put a chunk of brownie in the very middle of the oats in the jar.. oh. my. heavens. Best decision of my life. It was all melty and gooey…
And dinner last night after work was yet another craving… this time for burgers and fries.
A veggie burger topped with cheese, ketchup, mustard, and mayo on whole wheat bread…
With fries.
And there may have been a brownie and some wine for dessert…
