It’s almost Hump Day friends! Which means… almost the weekend! Who’s excited?
Yesterday was my first day at my summer job, which makes summer actually feel REAL now. This will be my 3rd summer working here and I LOVE it. Where do I work? It’s a local family who started a farm YEARS ago and now, they have a successful business! You can read more about it here. They sell about any produce you can think of and grow most of themselves. Right now, most of the local produce isn’t ready so they get it from a farmer’s market in Columbia, SC (which is actually where my dad works). They have their own peaches and strawberries in right now though.. well strawberries are about over but you get the idea. They also sell raw milk (which I haven’t tried), cheese, free-range meat, free-range eggs, jams, jellies, preserves, among other things. I took a few pictures to let you see what it looks like…

It’s definitely a nice place to work. However, dealing with the public can be VERY trying. Especially the elderly. Now, I have nothing against the elderly but if one more elderly lady insists on paying in pennies, yes PENNIES, I may scream. But I love my job, all in all.
It’s been a pretty great past couple of days. I spent Sunday night with the boy and it was AWESOME. He’s now gone to the beach for a couple of days and I miss him like crazy 😦 And I may or may not get to see him before I leave for Ireland Saturday. Sadness. Crossing my fingers that I do get to… In any case, we watched The Stepfather on Netflix, the movie with Dan from Gossip Girl (I’m not sure what his real name is). It was pretty good actually, not really scary or thrilling but a decent movie.
Monday morning was pretty much non-existent since I woke up about noon (thanks to staying up til 4AM or so the night before) and I had be to at work at 1. Which made for an on-the-go breakfast/lunch.
A yogurt mess! This would be Greek yogurt (duh), 1 cup or so of Kashi Heart to Heart, and peanut butter.
I also had a Carrot Cake Cliff bar later on at work, which I guess you could say was my lunch? And about 1/2 of a banana (most of it was mushy and gross). And a couple pieces of candy from work.
Dinner kind of made up for my lackluster in nutrition lunch and incorporated the big haul I got from work (I get a discount, heck yeah!). I was craving veggies like MAD.
So I turned my oven into a veggie roasting machine and had roasted sweet potatoes with salt, cinnamon, and Maple Agave…

And boiled Okra. Most people don’t like it boiled because they say it gets slimy (and truth be told, it is a bit) but I LOVE it. I’m weird. My great-grandmother used to make it this way when I was growing up (instead of frying it) and I always adored it. Still do. Simply wash and boil until soft, 5-10 minutes, and season with salt, pepper, and a little butter (er, Light Smart Balance). Delicious!
And “egg salad” made with 1 hard boiled egg, Greek yogurt, mustard, salt, and pepper.
Dessert was some light Vanilla ice cream with a peach mixed with cinnamon..
Topped with a bit of whipped cream. Kind of like a peach cobbler without the cobbler… so good!
I had the day off today and so I finally had time for a leisurely breakfast, in comparison to yesterday. And what did I have?
Oh I know you guessed it… Kashi Heart to Heart, almond milk, 1/2 of a banana, and peanut butter.
Can you say obsessed? Because I am. It’s all good though. I’m not sure what breakfasts will be like while we are in Ireland so I’m going to enjoy these last few days of “my” breakfasts.
Lunch was very simple but goooood… and incorporated more produce from work. Expect that to happen a LOT.
A sandwich on Publix whole wheat 5-Grain bread with deli chicken, mustard, Monterey Jack cheese, mustard, and tomato.
I was craving a sub so this was the next best thing…
Along with a cucumber, seasoned simply with salt and pepper. If you had GOOD ingredients, you don’t need to do much to make them shine!
And a nectarine and some pineapple. Gotta have fruit!
And then I got the itch to bake and so I made some Super-Charge Me! Cookies, with a few changes. I used whole wheat flour instead of spelt flour, Mighty Maple Peanut butter, white chocolate chips, semi-sweet chocolate chips, no fruit or nuts or coconut, and a splash of almond milk.
Oh my.. why have I waited so long to make these again? These cookies are TO DIE FOR. Especially this combo… wow. Seriously, go make these! Now! Ok? Ok.
I also had an epic afternoon snack (besides the cookie).
This would be yogurt, VitaMuffin Blueberry Bran Top, and (the key) macadamia nut butter.
This was one of those things that you just DON’T want to end! Oh my. Oh my my my…
And dinner was equally awesome. BUT I can’t tell you what it is because I’m doing a guest post on the recipes and I don’t want to give anything away…

Then came another cookie and Banana Soft Serve. When my life changed.
I don’t have a food processor and so I didn’t do it exactly as Gena says.. I used 1 frozen banana, couple splashes of almond milk, and some crushed ice at the end. I need to work on my technique but the result was nothing short of AMAZING!!!
I then added some crushed Reese Cup crumbs (which I had leftover from a cake I made last month). Do I even need to tell you how good it was?!
I made my mom try it without telling her what it was and she LOVED it! She thought it was vanilla ice cream!! And when I told her that it was just a banana and some almond milk and ice she was FLOORED. And the Reese Cup crumbs just took it to the next level… if you haven’t yet tried this, you HAVE TO. For real. Gena knows what she’s doing!
And I was also actually productive today! I finally took all of my summer clothes down and put up my winter clothes (not enough room for both at the same time in my closet). And cleaned my room, which hasn’t been cleaned since before I was on crutches… heh. I have to start packing on Thursday and I’m beginning to get a little stressed about it!! Does packing for a big trip stress anyone else out? I’m SO afraid I’m going to forget something!
Also, I’m looking for some good book recommendations to keep me busy on the plane… any suggestions?! Or new songs to put on my iPhone? How do YOU stay occupied while flying?
