Happy Monday friends! Thank you for your kind words on my previous post about Sweet Punkin, each and every one meant a lot to me.
In other news, which is not really news, I’ve been working my bootay off. I’m really enjoying it. Do I feel like I ran a marathon/and or have been hit by a semi truck after working a double yesterday? Why yes I do. But I know my body will get used to it in time. At least, I certainly hope so. And I am enjoying meeting new people and well, let’s be honest, the money isn’t bad either 😉
Other than working, I did attend a food festival in a city near me called Fall for Greenville (Greenville is the city). It’s basically where a lot of the restaurants set up booths on Main St. and you buy tickets and then the tickets will get you food. Each restaurant had 4 or 5 things from their menus. They also had live music, cooking demonstrations, competitions, etc. It’s a LOT of fun. Let’s just say I went Friday night with my best friend AND Saturday with my family. I didn’t take any pictures Friday night but I my friend and I split Sesame Chicken, an egg roll (the BEST I have ever had.. NO idea what made it so good), chocolate gelato, a mini cupcake with raspberry frosting, and baked ziti. Sounds like a lot of food but it was small portions and split two ways.. but all of that for only $20 worth of tickets! I did manage to snag a few pictures on Saturday..

In other food news, my food has been continuing the trend of the lacking of veggies. BUT I stocked up on fresh veggies and some healthy frozen dinners for when I’m in a fix this week.. so hoping the coming week will be a little more nutritionally balanced.
While not exactly balanced, I’ve eaten some good food lately!
Not THE mix but I just added pumpkin to regular whole grain pancake mix. Not near as good but you have to make the best of what you have 🙂

A quick dinner after work..
It had been in my freezer for a while and I finally pulled it out… not as good as Amy’s vegetable lasagna but not bad by any means!
And then a small cake square from a local bakery called Strossner’s.
Breakfast sunday was this bowl of half Kashi Go Lean Crunch, half Kashi Sunshine, Greek yogurt, almond milk, and a banana.
This baby kept me full until I got a break around 4! Epic.
On my break I had a grilled chicken sandwich and french fries. Not the healthiest of choices for sure but it was what I was craving. I ended up still being full after work from that meal and so I never had a “dinner.” But i did have this cupcake I had saved from said bakery earlier.
So cute! And delicious! A yellow cupcake covered in a chocolate ganache. Um YUM.
Breakfast this morning was eggy oats (1/2 cup oats, 1/4 cup egg whites, 1/4 cup water, 1/4 cup milk, cinnamon, vanilla, salt) topped with Justin’s hazelnut butter and maple syrup.
I don’t think I need to expand on how much I love chocolate for breakfast.
“Lunch” was an apple and this Clif Bar..
When they say crunchy, they MEAN it…
Plus a hunk of sourdough bread.
Dinner was VERY balanced tonight. And delicious!
Roasted potatoes and green beans (a la Jessica)
Umm.. the green beans were to DIE FOR!!!! No joke.
And roasted teriyaki shrimp.
Dessert was light vanilla ice cream topped with chocolate syrup.
A day is not complete without chocolate, I say 🙂
So today probably should have been a rest day. But I haven’t been to the gym since… well sometime last week? And since today is my only day off this week, I wasn’t sure when I’d be able to go again so I FORCED myself to go to the gym even though, like I said from above, I kind of feel like I’ve been hit by a truck. My entire body is sore/achy and I don’t think I’ve felt like this since back on the day after my long runs. Yet I STILL forced myself to go work out. I think I felt slightly guilty from my indulgent eating this weekend and guilty from not working out in so long.. even though I know I’m burning tons of calories and energy waitressing… hence the soreness. And I took it pretty easy, 20 minutes on the elliptical, lots of weights, and abs. How do you handle situations like this?
