Yes, I admit it. I have commitment issues. As in I can’t commit. As is evidenced by the 10+ open jars of different nut butters that are currently taking up almost an entire shelf in my refrigerator AND cabinet. And then this happened…
Yes, my friends, the giant wall of nut butter. Where I purchased another jar of nut butter. Thank you Whole Foods for supporting my inability to commit. Pshhh.. who needs that?!
So yes, I did indeed go to Whole Foods today. And Target. Be jealous 😉 I came home with a carload of groceries, workout gear, and dishware. And tons and tons and tons of bars. In other words, the best things you can possibly buy.
The haul:
Cute workout clothes from Target including 2 pairs of shorts and 2 shirts.
Isn’t it cute?! Definitely a step up from my previous PT wardrobe..ahem.
And I got a sports bra that is amazing. I love you Target.
They also have cute dishes, as we all know.
Perfect for smoothies!
I’m a sucker for cute dishes.. it’s true.
Thank goodness I’m going back to work Monday and earning some money…
I started the day off with something pretty boring to you all I’m sure… cereal again.
Nature’s Path Blueberry Cinnamon with 1/2 of a banana and 1% milk. Exactly what I was craving.
With some coffee and one of my winter mugs. Cute mugs are cute mugs, I don’t discriminate with the seasons 🙂 Not to mention that 90% of my mugs are winter themed.. not sure why that is.
Lunch was the BOMB!!
This beastly salad had:
- romaine
- tomato
- broccoli
- carrots
- turkey
- pickles
- ketchup
- mustard
Tasted like a turkey sub with lots of pickles.. san the actual sub part. Delish!!!
With a side of peanut butter toast.
On my way home from Whole Foods, I had a serving of these peanut butter filled pretzels. Dang. Nuff said bout that.
And this deeeeelicious tea!
For dinner, I whipped up one of the lovely Jessica’s recipes, Crispy Honey-Ginger Chicken.
They were SO FREAKING GOOD!!! You can follow the link for the recipe but it basically involves marinating the chicken in a mixture of buttermilk, honey, ginger, and garlic. Then you dredge them in whole wheat bread crumbs (I didn’t have the panko that the recipe called for), whole wheat flour, and spices and bake. And then, you dip them in honey.
Oh my.. oh my… Try these!!! They reminded me of when I was younger and used to dip chicken nuggets in honey AND barbecue sauce together. Sounds weird but it was awesome.
I also had some kale that I sautéed with some chicken stock and POM. Along with salt and pepper. Simple but awesome.
Annnnd some fresh white corn on the cob. I boiled them in water that was salted and buttered (heh) for 5 minutes, perfect.
And for dessert I had a bowl of fresh berries (strawberries, raspberries, blueberries, and blackberries).
And 1/2 of a sugar cookie and 1/2 of a chocolate oatmeal cookie from Whole Foods. Dare I say it, the sugar cookie was the best!!! It’s amazing how something so simple can be so wonderful.
I have all sorts of new foods from Whole Foods, at least new to me, like coconut milk, cashew butter, tempeh,… Which, by the way, I’ve never cooked tempeh before, how should I go about it for the first time? Any good recipes?
By the way, I loved your responses to the survey questions yesterday!! So fun!!! I also just wanted to take a moment to thank you all for reading. You guys seriously make my day. You uplift me, encourage me, make me laugh, support me, and make me smile when I’m having a hard time. This blog has truly changed my life, but not because of the blog itself, because of the relationships and friendships I have formed through the blog world. Each and every one of you are amazing and gorgeous and have the biggest loveliest hearts. I love you all. You are always in my thoughts and prayers!
Check out this article my girl Lauren sent me today about injuries, it is awesome!!! And so, so very true! It’s a great article for anyone who has ever had an injury, currently has one, or is a runner.
Good night!
Love,
Jess

I just LOVE Target. It’s like an affordable department store. I love the dishes you bought! When my husband and I got married almost 2 years ago, I got a set of dishes from Target a lot like those being black and white, but they have a different print on them. I also have the cups too and they look a lot like yours. I think your dishes are the updated version of mine! Maybe I should go get some…

Not going to lie…I seriously stared at that nut butter pic in awe for a good minute. My one goal in life is now to go to a whole foods. This will be bad for my wallet, but some things just need to happen, ya know?
haha – seriously though, sounds like you had a great day! And got some super fun finds, too.
Your dinner looks amazing!! I’ll be awed by anything honey, though – so it’s a given I’d adore it 😉
Have a great night, love ya girl!

This post makes me wish we lived near each other so we could go to Target and WF together. And eat those yummy looking cookies And I could show you how to cook tempeh. Which, by the way, I have an delicious marinade for- I’ll send you an email with it stat! Mike’s mommy gave it to me and it’s amazing 🙂
I totally dipped my chicken nuggets in honey and ketchup, which I think is even grosser than honey + BBQ. And by gross, I mean absolutely delicious. Sometimes I get nostalgic for the days of eating Lucky Charms and Happy Meals totally guilt free…
Love that shirt!! At the expo for my half there was a company selling shirts that said “I Run Like a Girl.” Which is something to be proud of, in my opinion! You’ll be stopping all those PT cuties dead in their tracks 🙂
Hope you have an amazing Friday girl!! Love you!!

BBQ sauce goes great on tempeh…but then again, what does it not go great on? Nice Target haul! I love shopping there but I always buy way more than I actually need. Have a great night, girl!

That’s such a cute top! Aren’t target workout clothes the best?? 🙂
Since you’re a tempeh newbie, I would reccommend boiling it for 10 minutes before you do anything with it (it gets rid of the bitter taste that some people don’t like). I like baking mine with BBQ sauce!
Have a good night girlie

This is why I tend to avoid Whole Foods- that crazy wall of butter. Oh man… although it is probably the place to track down cashew butter- TJ’s unfortunately doesn’t have any (or at least the one I go to doesn’t). I’m proud of you for not going completely nuts and taking the whole wall home with you (get it- nuts? oh man I have the worst sense of humor…).
I’ve seen the “train like a girl” stuff at Target, too. I think they have a sports bra that says that- I may splurge on that one… much more fun that my boring Champion duds…
Have a great night! And btw, I’m just as happy that I met you! 🙂

Aww, girl, love you too ❤ Definitely 🙂
Can I say that I'm a little jealous with your amazing haul today? I'm a complete sucker for good food and pretty dishes. Oh, and I think the reason that most of your mugs are winter based is because mugs are for warm drinks, and warm drinks are (usually) for winter. I miss my winter dishwater though; it always makes me think of Christmas, and who doesn't like Christmas 🙂
Hope you're having a great night!

I wish we had a wall of nut butters in my grocery store … we have 2 choices – chunky or smooth 🙂

Haha yet more things we have in common! 90% of my cute mugs (of which I have a large selection) are christmas/winter themed!! And I have chocolate PB, inferior chocolate PB, chunky PB, cashew butter, hazelnut butter and almond butter all open 😀 which is EVERY SINGLE variety England stocks!! Which leads me to saying…GOOD LORD at that wall! Er, DREAMY!!! It’d be worth going to the USA JUST for that wall….wow 🙂

I love target workout clothes too– such cute stuff for the right price!

Oh those peanut butter pretzels would be SO dangerous around me! Tempeh is SO good, you’re going to love it! I like to crumble it and cook in a splash of veggie stock and taco seasoning to make tempeh tacos! But it’s also good baked in a maple/mustard marinade, cubed and stir-fried with veggies, or just plain RAW. Seriously. I have a tempeh problem…

I LOVE all of your Target finds!
I am the same way with nut butter – I have several opened jars! I need to stop buying them!

I have been reading your blog for a few weeks now and LOVE it!! In fact, I like it so much that it’s definitely in my top 5 blog favorites (and that’s a huge compliment, considering I’ve checked out tons and tons of blogs!) 🙂 I admire you SO much for your optimism & determination after your injury. You inspire me daily! Your meals and snacks are so creative, and you are definitely on your way to becoming a gourmet chef! 😉 Keep up the great work, girl!!

I love Target, but I go in for one thing and walk out $100 poorer. Those Liberty of London plates and glasses are adorable, though. Oh, and those chicken nuggets sound so good–minus the garlic because I can’t do that. But buttermilk marinated? Mmmm

I love how your salad looks like a hamburger minus the bun. And the meat. Okay it clearly looks nothing like a hamburger but I think you know what I mean.
I love Target’s workout clothes! They are the best and last forever. Unlike my sweater. 😦

I’ve been on the lookout for tempeh recipes too and I’ve seen a lot of people marinade it in something simple just for a half hour or so and then grill it. Good luck!

I love Target! I wish we had it in Canada. I would buy so many cute new dishes too…I have the ugliest dishware but I can’t afford any new ones (too much money spent on my own nut butter habit) or fit them into my small cupboards. I have so much fun shopping at target (we strictly pronounce it tar-jay in my family) when I go to the U.S.
I just tried cashew butter for the first time. I had it with an apple- so good! Its the texture of melty marshmallows (or at least the artisana brand is, in my opinion). Hope you love like I do! I also love tempeh…but a lot of people don’t. Its hit or miss there. Try to find a highly recommended recipe so you don’t get put-off on your first time. Its probably an acquired taste and texture.
Love your last paragraph- you are such a sweetheart. xox

Loved that article…it made me feel proud of myself of all I have learned from being injured/disabled with these nerve problems.
Is it bad that I stick to the regular old Skippy peanut butter, it’s so much more satisfying to me than organic PB. I do like almomd butter too though. I eat SO much peanut butter, it is literally my favorite food!
Hope you are well!

Peanut filled pretzels. I want that. Here the fanciest we have is pretzels with sourcream and onion taste. Good, but I do not think they beat yours! 🙂
Enjoy your weekend, your work out clothes were really cool! It should be one where it stood Kick ass like a girl ;P

So I’m dying to know…what kind of nut butter did you get?!

sigh, I WISH we had a target in England!
Tempeh is a new discovery for me too, but my favourite was to cook it so far is to do tempeh ‘fries’. Basically, just cut it into strips, marinade in whatever takes your fancy (I usually go for hot sauce + soy) then roast in the oven until crispy. Its delicious in sandwiches as well, with jam apparently, although I’ve not tried that one yet!
BTW, I love love love your blog. It’s incredibly inspirational!
