My plans last night unfortunately fell through and were re-scheduled for tonight. Take a moment with me as I cross my fingers that it DOES happen tonight… ANYWHO, I apologize for this quick post but we’ll cover all the basics and then I have something a little extra to share at the end.
I started yesterday with a simple bowl of cereal,
1 cup Nature’s Path Cinnamon Blueberry, 1/3 cup Kashi puffs, 1/2 of a banana, and blackberries. I had this with regular 1% milk because I’m not sure I’m quite ready for the almond milk on it’s own.
Lunch was some of the sprouted wheat cinnamon raison bread that I topped with almond butter…
Strawberries…
And a GM. Looks ugly, but was great!
It had:
- 1 cup or so of baby spinach, raw
- 1 cup almond milk
- 1/2 of a banana
- 1 tbsp or so of cocoa powder
I had dinner with family and we had a good Southern meal! I don’t eat like this very often but it’s great once in a while!
We had fried potatoes, cornbread, macaroni and cheese, pinto beans, and cantaloupe.
Breakfast today was INSANELY delicious! Just take a look at this…
This would be an oatmeal pancake, a la Kath!
This beauty was made of 1 packet instant oats (which is equal to 1/3 a cup), 1 heaping tsp. whole wheat pancake mix, 1/3 cup egg whites, cinnamon, maple extract, vanilla extract, 1/2 tsp. baking powder, and 1/4 of a banana. I let it sit for a few minutes and then cooked it over med/med-low until nice and brown.
And it was topped with TJ’s salted almond butter, strawberries, 1/4 of a banana, melted Crofter’s, Greek yogurt mixed with cinnamon, and a drizzle of the maple Agave. *deep breath*
Holy crap. I can’t even tell you how good it was! The addition of the pancake mix made it SUPER fluffy and just amazing. And the salted almond butter with the sweetness from the other ingredients… oh boy. Please go try this now!
My tummy was feeling a bit “off” today (tmi?) so I went with something small and comforting for lunch.
I nuked a sweet potato and covered it in almond butter and Maple Agave. So so so good!!
And some yogurt with a pluot.
Ummm I don’t think I like pluots. I thought I’d give them a try since I’ve never had one but yeah… not a fan. Or maybe it was just a bad one?
My tummy was still feeling pretty crappy by the end of the day. I was hungry but every time I ate I would feel sick… blech. So I ate something easy on the stomach…
1 egg, 1 egg white, 2 slices whole wheat bread, and some Rice Milk Pepper Jack Cheese.
The cheese tasted just like real cheese! And it was VERY spicy.
And now I will leave you with the following, well, quote, that I found a while back. I can’t remember where I found it or I would give credit but I thought it was beautiful…
I believe . . . that just because two people argue, it doesn’t mean they don’t love each other. And just because they don’t argue, it doesn’t mean they do.
I believe . . . that we don’t have to change friends if we understand that friends change.
I believe . . . that no matter how good a friend is, they’re going to hurt you every once in a while and you must forgive them for that.
I believe . . . that true friendship continues to grow, even over the longest distance. Same goes for true Love.
I believe . . . that you can do something in an instant that will give you heartache for life.
I believe . . . that it’s taking me a long time to become the person I want to be.
I believe . . . that you should always leave loved ones with loving words. It may be the last time you see them.
I believe . . . that you can keep going long after you think you can’t.
I believe . . . that we are responsible for what we do, no matter how we feel.
I believe . . . that either you control your attitude or it controls you.
I believe . . . that heroes are the people who do what has to be done when it needs to be done, regardless of the consequences.
I believe . . . that money is a lousy way of keeping score.
I believe . . . that my best friend and I can do anything or nothing and have the best time.
I believe . . . that sometimes the people you expect to kick you when you’re down, will be the ones to help you get back up.
I believe . . . that sometimes when I’m angry I have the right to be angry, but that doesn’t give me the right to be cruel.
I believe . . . that maturity has more to do with what types of experiences you’ve had and what you’ve learned from them and less to do with how many birthdays you’ve celebrated.
I believe . . . that it isn’t always enough to be forgiven by others. Sometimes you have to learn to forgive yourself.
I believe . . . that no matter how bad your heart is broken, the world doesn’t stop for your grief.
I believe . . . that our background and circumstances may have influenced who we are, but we are responsible for who we become.
I believe . . . that you shouldn’t be so eager to find out a secret. It could change your life forever.
I believe . . . two people can look at the exact same thing and see something totally different.
I believe . . . that your life can be changed in a matter of hours by people who don’t even know you.
I believe . . . that even when you think you have no more to give, when a friend cries out to you – you will find the strength to help.
I believe . . . that credentials on the wall do not make you a decent human being
I believe . . . that the people you care about most in life are taken from you too soon.
What do you believe?
Love,
Jess

Lovely quote(s)!! I believe in a heck of a lot of them 🙂 I believe that we are the only ones who can change out future (as in our paths are not set in stone), and if we want to be happy, if we want to change, if we want to be good people (or bad people, whatever floats one’s boat :p) – it’s all down to us, no-one else!!
Have a great time tonight – are you out with a certain someone!? 🙂 xxx

Omigosh that pancake… words simply escape me. I believe I will have to try something like that very very soon.
I believe . . . that our background and circumstances may have influenced who we are, but we are responsible for who we become. This one is my favorite. For the longest time, I used past pain and hardships as a way to justify my less than stellar behavior and outlook on life. I indulged in my misery because I felt like I had an excuse… It wasn’t until I finally woke up and realized that if I wanted a better future, I had to stop clinging to the past.
It’s hard, but ultimately we’re the only ones who have the power to direct where our lives go. Things may happen to try and veer us off course, but if we keep a strong mindset, we’ll stay on the right path.
Love you ❤

Ohh, your breakfast. Gah. Ah. Mm.
Those words were beautiful.
I believe that we should show more respect and tolerance. I believe that we should start view each other as humans, and treat each other as living creature who wants love and happiness. It does not matter what faith you have, what sexuality or nationality. You are human, I am human- can we live peacefully together?
I believe that we should share more. There is no justice in that a small percentage of the worlds population has pretty much all of the wealth and power.
I believe that we need to smile more. Try to focus on how beautiful life is.
I believe that everyday should include some spoons of peanut butter.
I believe that we have the power to change. To change our own life. Inside of each single one of us there is incredible strength and capabilities, we must never doubt that we can.
Hope you are doing great beauty 🙂

Your breakfast pancake looks AMAZINGLY DELICIOUS! Looks like it came from a restaurant! So so jealous…..
Okay, question: What is a pluot? I have never heard of them before! (They look like a cross between a plum and something else, but I can’t put my finger on that something else…)
I love sweet potatoes, but have never had them w/ almond butter. I usually have them as homefries, but you inspired me to try something different.
Thank you for the quote you ended with. How beautiful.
I believe……. everyday is a new opportunity, every moment the possibility for change. Make them happen.
