My plans last night unfortunately fell through and were re-scheduled for tonight. Take a moment with me as I cross my fingers that it DOES happen tonight… ANYWHO, I apologize for this quick post but we’ll cover all the basics and then I have something a little extra to share at the end.

I started yesterday with a simple bowl of cereal,

1 cup Nature’s Path Cinnamon Blueberry, 1/3 cup Kashi puffs, 1/2 of a banana, and blackberries. I had this with regular 1% milk because I’m not sure I’m quite ready for the almond milk on it’s own.

Lunch was some of the sprouted wheat cinnamon raison bread that I topped with almond butter…

And a GM. Looks ugly, but was great!

It had:

  • 1 cup or so of baby spinach, raw
  • 1 cup almond milk
  • 1/2 of a banana
  • 1 tbsp or so of cocoa powder

 

I had dinner with family and we had a good Southern meal! I don’t eat like this very often but it’s great once in a while!

We had fried potatoes, cornbread, macaroni and cheese, pinto beans, and cantaloupe.

 

Breakfast today was INSANELY delicious! Just take a look at this…

This would be an oatmeal pancake, a la Kath!

This beauty was made of 1 packet instant oats (which is equal to 1/3 a cup), 1 heaping tsp. whole wheat pancake mix, 1/3 cup egg whites, cinnamon, maple extract, vanilla extract, 1/2 tsp. baking powder, and 1/4 of a banana. I let it sit for a few minutes and then cooked it over med/med-low until nice and brown.

And it was topped with TJ’s salted almond butter, strawberries, 1/4 of a banana, melted Crofter’s, Greek yogurt mixed with cinnamon, and a drizzle of the maple Agave. *deep breath*

Holy crap. I can’t even tell you how good it was! The addition of the pancake mix made it SUPER fluffy and just amazing. And the salted almond butter with the sweetness from the other ingredients… oh boy. Please go try this now!

My tummy was feeling a bit “off” today (tmi?) so I went with something small and comforting for lunch.

I nuked a sweet potato and covered it in almond butter and Maple Agave. So so so good!!

And some yogurt with a pluot.

Ummm I don’t think I like pluots. I thought I’d give them a try since I’ve never had one but yeah… not a fan. Or maybe it was just a bad one?

My tummy was still feeling pretty crappy by the end of the day. I was hungry but every time I ate I would feel sick… blech. So I ate something easy on the stomach…

1 egg, 1 egg white, 2 slices whole wheat bread, and some Rice Milk Pepper Jack Cheese.

The cheese tasted just like real cheese! And it was VERY spicy.

 

And now I will leave you with the following, well, quote, that I found a while back. I can’t remember where I found it or I would give credit but I thought it was beautiful…
